1 cup cornmeal
1 cup flour
2 tsp. baking powder
1 tsp. salt
1/3 cup oil
1 cup milk
1 egg
1/2 cup sugar
Combine all ingredients. Bake
at 400 degrees for 25 minutes or until toothpick comes out clean.
Honey Butter
2 sticks REAL butter, (close to
room temperature works best when slightly chilled still)
2/3 cup honey
3/4 cup powdered sugar
Be sure to use ONLY real butter
(no margarine). (If your butter is too soft, you'll end up with a gooey mess,
so just leave it out on the counter for about 20 minutes or so before beating
and it turns out nice and fluffy.) Just place it all in a bowl and beat with an
electric hand-mixer for about 30 seconds. Serve at room temperature with warm
rolls, scones, breadsticks, corn bread, waffles, toast, etc.
